Mauviel Cookware France
This is the cookware we used in every professional kitchen and school I attended in France. Mauviel is a 200+ year old French company that produces the finest copper cookware in the world. Cooks do not need all copper but every well equipped kitchen needs at least one saucepan, a saute and a fry pan. The thick copper produces extraordinary results when browning or for fast reductions. I have consulted with Mauviel on several occasions and am pleased they now offer their cookware with stay cool stainless handles. We have a collection of their professional style with the cast iron handles but for home use the new line is good. Be sure to buy the stainless lined not the tin. In France there are stores that do retinning but here there is one and the cost of retinning is the same as purchasing a new pot. Mauviel's specialty pans all come tinned, but this is not a problem as pans such as a tarte tatin or au gratin are not used daily.
Great Pairings or Ideas
We use the larger pieces of Mauviel as accent pieces when not cooking in them, the stock pots, braising pans, and confiture pans.
